  1. 1 eggplant, chopped
  2. 2 pink capsicums, chopped
  3. 500g lean turkey breast fillet, fat trimmed, cut into 3cm portions
  4. 1/2 teaspoon floor allspice
  5. 1/2 teaspoon ground cumin
  6. 2 teaspoons finely grated lemon rind
  7. 1 tablespoon olive oil
  8. 2 red onions, cut into thin wedges
  9. 400g can borlotti beans, rinsed, tired
  10. 1/2 cup chopped clean flat-leaf parsley leaves, plus extra sprigs to garnish
  11. 2 teaspoons lemon juice

  1. Preheat oven to 200C or 180C fan-forced. Line a baking tray with baking paper.
  2. Spread eggplant and capsicum on prepared tray. Lightly spray with oil. Bake for 20u201325 minutes or till golden and gentle.
